The cinnamon bun or "kanelbullar" (as we say in Sweden) is a traditional Swedish sweet created in the 1920s. It is so popular that it even has its own day: October 4th.
It can be eaten at any part of the day, but in Sweden it is a tradition to have "Fika", which is a coffee break accompanied by some sweet, usually cinnamon buns.
At IKEA you can buy them in the Swedish Bistro to eat them at the moment or in the Swedish Food Market already prepared so you only have to bake them. If you want to try to make them yourself at home, here we leave you the complete recipe.
Ingredients
Buns75 g fresh yeast
500 ml milk
1,8-2 l flour
200 g butter
200 ml superfine sugar
2 eggs
1 teaspoon salt
1 teaspoon nutmeg
Cinnamon filling
100 g marzipan
100 g butter
125 ml superfine sugar
2½ tablespoons dry bread crumbs
1 tablespoon water
1 tablespoon cinnamon
Glazed and adornment
1 egg
1 ml salt
½ teaspoon water
Pearl sugar
Elaboration
- Get out all ingredients and let them reach room temperature.
- Mix the yeast and the milk until the yeast dissolves.
- Add most of the flour, all butter pieces, the sugar, eggs, salt and nutmeg. Work the dough by hand or with a mixer until it gets homogeneous. Add more flour if necessary. When the dough is homogeneous and grease starts to ooze, it'll be ready.
- Leave the dough on a cloth to rise until doubled in size (about 30 minutes).
- Meannwhile, prepare the filling. Mix the grated marzipan with the butter, sugar, bread crumbs, water and cinnamon.
- When the dough is ready, put it on a pastry board, work it and divide by two. Stretch each piece with a rolling pin into a large rectangle. Spread on top the cinnamon filling.
- Roll the dough on the longest side. Apply some water on the edge with a basting brush, so that it adheres better.
- Cut the roll into 2-3 pieces and place on a tray covered with baking paper, leaving enough space to grow.
- Put a cloth on top and wait to rise until doubled in size (about 20-30 minutes).
- Preheat the oven to 250°C.
- Beat egg, salt and water, apply the mixture on rolls with a basting brush lightly. Sprinkle it with pearl sugar.
- Bake in the center of the oven for 7-8 minutes.
