Festive herrings with golden butter

INGREDIENTS
Holiday herring
- 500 g (2 jars) SILL MATJES matjes herring fillets
- 2 slices of rye bread or black rye bread
- 1 large red onion
- 1 tsp lemon juice
- 75 g butter (2 tbsp for the fried bread)
- 8 small potatoes, boiled
- 3 eggs, boiled
- 4 tbsp chives, finely chopped

STEP BY STEP
- Finely chop the bread and then fry it in butter in a frying pan for about 5 minutes until it is lightly browned.
- Finely chop the red onion and mix it with the lemon juice, then set aside.
- Drain the herring.
- Slice the potatoes.
- Peel and chop the eggs.
- Arrange the potatoes in a circle on a large plate, then add the herring and eggs. Sprinkle the pickled red onion, breadcrumbs and chives over the top.
- Melt the rest of the butter in a saucepan and brown it on medium heat until golden, stirring constantly.
- Spoon the hot browned butter over the dish just before serving.
