Festive herrings with golden butter

INGREDIENTS

Holiday herring

  • 500 g (2 jars) SILL MATJES matjes herring fillets
  • 2 slices of rye bread or black rye bread
  • 1 large red onion
  • 1 tsp lemon juice
  • 75 g butter (2 tbsp for the fried bread)
  • 8 small potatoes, boiled
  • 3 eggs, boiled
  • 4 tbsp chives, finely chopped

STEP BY STEP

 
  1. Finely chop the bread and then fry it in butter in a frying pan for about 5 minutes until it is lightly browned.
  2. Finely chop the red onion and mix it with the lemon juice, then set aside.
  3. Drain the herring.
  4. Slice the potatoes.
  5. Peel and chop the eggs.
  6. Arrange the potatoes in a circle on a large plate, then add the herring and eggs. Sprinkle the pickled red onion, breadcrumbs and chives over the top.
  7. Melt the rest of the butter in a saucepan and brown it on medium heat until golden, stirring constantly.
  8. Spoon the hot browned butter over the dish just before serving.
